Kuska recipe is a simple traditional plain biryani, which includes basmati rice, spices and curd.
This recipe can be prepared in pressor cooker or vessel or fry pan. and kuska recipe is very easy to make without vegetables or meat. here we will use only onions and tomatoes to make this kuska recipe. and curd and spices are main ingredients in this recipe.
You can use only onions for this kuska recipe, with out veggies also this recipe is delicious.
Kuska recipe will take short time to prepare when we compare to other biryani recipes. and this is very tasty biryani which can be prepared easily by anyone.
Below I have given step by step kuska recipe.
How to make kuska recipe :
Step 1 Initially, soak 2 cups of basmati rice about 20-30 minutes. if you want to prepare more quantity of biryani you can take the amount of basmati rice as you needed.
Step 2 In a fry pan add 2 tables spoons of melted ghee or 2 table spoons of oil. here I have used melted ghee.
Step 3 Add all the spices such as one cardamom pod, one bay leaf, 2-3 cloves, 1/2 inch cinnamon, 1/4 spoon sahjeera. and sauté for a minute.
Step 4 Add one bowl thinly sliced onions, & 2 finely chopped green chili, sauté till onions become transparent.
Step 5 Now, add 2 finely chopped tomatoes & 1/4 bowl mint leaves, and sauté them till becomes soft also fully cooked.
Step 6 Further more add all the masala powders, 1/2 spoon turmeric powder, 1 tea spoon coriander powder, 1tea spoon cumin powder, 1/2 spoon garam masala powder, 1/2 spoon red chili powder.
Step 7 Add 1/2 bowl of fresh curd, combine & cook about 5 minutes, till the gravy becomes thick consistency. make sure all the spices cooked well.
Step 8 Add soaked basmati rice and sauté for a minute. then add 3 cups of water. the water quantity should be take 1 & 1/2 cup water for 1 cup soaked basmati rice.
Step 9 Next add required amount of salt and combine Cook about 15 - 20 on low - medium flame.
After 15 minutes check once, if there is water slightly in rice then cook for more 5 minutes. and then remove from flame.
Now, the spicy and tasty kuska recipe is ready to serve. you can serve with biryani kurma or you can eat & enjoy directly kuska or plain biryani without any curry.

1 In first step, take 2 cups of basmati rice, wash them for 2 times and soak for 20 minutes.
2 In a vessel add 2 table spoons melted ghee or oil, and let it heat for a minute.
And then, add spices 1 bay leaf, 3 cloves, 1/2 inch cinnamon, 1/8 spoon sahjeera, 1 cardamom pod. then sauté for a minute.
3 1 bowl of finely sliced onions and 2 finely chopped green chili. sauté them till they becomes transparent.
4 Further more, add 2 finely chopped tomatoes and 1/4 bowl mint leaves. then sauté them till they become soft and fully cooked.
5 Now, add all the spices such as 1/2 spoon red chili powder, 1 tea spoon cumin powder, 1 tea spoon coriander powder, 1/2 spoon turmeric powder, 1 tea spoon garam masala.
Combine them and sauté for a minute.
6 Then, add 1/2 bowl fresh curd & combine with spices. and add few water to make this gravy.
Cook till this gravy becomes little thick.
7 Once the gravy is ready, then add 2 cups soaked basmati rice, and sauté them for a 2 minutes.
8 Now, add 3 cups of water and add required salt, once check taste whether the salt is enough to taste.
9 Close lid and cook about 15-20 minutes om medium flame.
10 Now, open lid & combine once, check if its fully cooked. once done remove from flame, serve hot & spicy plain biryani or kuska recipe is ready to serve.
