About paneer :
Soft paneer recipe with milk is a non melted cheese made from cow milk or buffalo milk, which is also called as Indian cottage cheese. and it is prepared by curdling milk using lemon juice.
This is very easy to make using lemon juice. this lemon juice helps to curdle milk easily. but forming a shape and make this tight will take at least one hour time.
once you done with this you need store this in fridge to keep it fresh for a week. and you can wrap in air lock plastic bag and store in freezer for long time up to 2 months.
Generally paneer used to make vegetarian dishes such as paneer butter masala, paneer tikka,
Palak paneer, paneer biryani etc.. although we can make yummy snacks like paneer puff, zingy, paneer roll etc..
The advantage of paneer is it has rich source of proteins.

How to make Soft paneer recipe with milk at home :
Step 1 Initially in a large cooking vessel or pot take one liter of milk. here I made this with buffalo milk.
Step 2 Put this vessel on the stove and let them heat slowly, do not over boil or reduce the amount of milk. you need to heat till hot enough. once it has reached desired temperature remove from the flame.
Step 3 Now pour two lemons juice into milk and stir continuously till the milk curdle completely.
Step 4 Drain gently curdled milk using plain cloth, and take all the corner of cloth at center and pack tightly. be careful while making this step because its already hot. to prevent this pour some cool water over this pack.
further more squeeze tightly to remove remains water from paneer.
Step 5 Shape to square or keep as it is and pack tightly. and put heavy weight over it about one hour & leave it.
Step 6 After one hour gently remove weight, open pack to take out paneer. now Soft paneer recipe is ready.
you can store this paneer in fridge. And cut into cubes when you wanted to prepare dish with this.
Ingredients for Soft paneer recipe with milk :
1 Milk - 1 liter
2 Lemons - 2
3 Cool water - one glass

1 Initially, take one liter of milk in large vessel. let them heat till hot enough.
2 Once they reached to desired temperature remove from the flame. and pour 2 lemons of juice into hot milk and stir continuously.
3 Milk started curdling and stir continuously to let them curdle completely.
4 Drain paneer gently using fresh cloth.
5 Bring cloth at center and pack tightly. and pour some cool water over it to make cool down.
6 Squeeze excess water gently.
7 Fold cloth from four sides to get form paneer to square shape or you can keep as it is.
8 Now, put heavy weight over it. and rest about one hour.
9 After one hour, remove weight and open this pack. now you can see the Soft paneer is ready.
10 Cut this paneer into cubes when you are using to make curry. other wise store this in freezer to keep it fresh and it might be change its texture to tight.
11 Cut this Soft paneer cubes by showing below picture. and you can wrap in plastic zip bag and store this in freezer for long time.

2 When you want to use frozen paneer its hard to cut into cubes, for that keep frozen paneer into warm water for a while to make this soft and to cut it easily.
3 You can find whether the paneer expired by checking its color because if its expired means it has change color to slight yellow and appear some brown spots over it.
