Telangana Mirchi bajji recipe : Telangana Mirchi bajji recipe is a evergreen Indian snack recipe and widely prepared evening snack by green bhaji mirchi, and besan. is a deep fried snack food which is mostly served at street side.
The mirchi is usually prepared with besan flour, but to get crispy fried mirchi we need to add rice flour according to the quantity of besan. also need to add some hot oil to bhaji flour before going to make bhaji batter.
And the stuffing part is also important for this recipe because the taste of bhaji will become more tasty. I used to stuff tamarind paste inside of the green mirchi. this will make bhaji so tasty, you will enjoy the sour flavor while eating.
Some people use only salt, But I personally like sour flavor. Instead of this you can also use only salt. and serve this tasty Telangana Mirchi bajji with pea nut chutney or onion tomato chutney or tomato sauce.
How to make Telangana Mirchi bajji recipe :
Preparing bajji batter :
Step 1 Initially, in a large mixing bowl add one bowl of besan (gram flour), and 1/4 bowl of rice flour. sieve the flour before you add to remove dust particles.
Step 2 Add 1 table spoon of hot oil to the flour and combine gently.
Step 3 Now add 1 tea spoon ginger garlic paste, 1 tea spoon red chili powder, salt as required, crushed carom seeds 1 tea spoon, 1 tea spoon jeera powder, 1 tea spoon coriander powder, 1/4 tea spoon turmeric powder, and 1/8 spoon cooking soda.
Step 4 Combine them all, and add water gradually top make soft bajji batter. batter should not be too thin or too thick. it should have flowing consistency but should have little thick consistency.
Preparing stuffed mirchi :
Step 1 Remove seeds inside of the each mirchi. and wash them once.
Step 2 Now, in a small bowl soak one tea spoon tamarind for 5 minutes. then squeeze thick tamarind pulp, in this add 1/2 tea spoon crushed carom seeds and 1/8 spoon of salt, 1/2 tea spoon sesame seeds powder (optional).
Step 3 Stuff this inside of the mirchi using spoon or directly with your finger. stuff all mirchi like this and set aside.
Deep frying mirchi bajji :
Step 1 In a large fry pan add required oil for deep fry. and let it heat till hot enough.
Step 2 Once oil is ready, dip mirchi in bajji batter and coat full mirchi with batter, then immediately wipe one side batter to pan edge, and slid in hot oil one by one.
Step 3 Adjust the flame on medium, fry till they get golden brown.
Step 4 Once they reached to desired color then transfer them to serving bowl and enjoy Telangana Mirchi bajji with sauce or pea nut chutney.
Ingredients :
1 Gram flour - 1 bowl
2 Rice flour - 1/4 bowl
3 Ginger garlic paste - 1 tea spoon
4 Crushed carom seeds - 1 tea spoon
5 Cooking soda - 1/8 spoon
6 Turmeric powder - 1/4 spoon
7 Salt - as required
8 Red chili powder - 1 tea spoon
9 Coriander powder - 1 tea spoon
10 Jeera powder - 1 tea spoon
11 Hot oil - 1 table spoon
12 Oil - required for deep fry
Given below step by step recipe :
1 Initially, in a large mixing bowl, add one bowl of gram flour and 1/4 bowl of rice flour.
2 Add 1 tea spoon crushed carom seeds, 1/4 spoon turmeric powder, 1 tea spoon red chili powder, 1 tea spoon ginger garlic paste, and 1/8 spoon cooking soda.
Further more add salt to taste, 1 tea spoon sesame powder, 1 tea spoon coriander powder.
4 Add water gradually, make soft batter without lumps. batter should not be too thin. or not too thick.
5 In a small mixing bowl, soak 1 tea spoon tamarind, and make thick pulp. in same bowl add salt to taste, 1/2 tea spoon crushed carom seeds.
and 1/2 tea spoon sesame powder and combine all them to paste.
6 Slit mirchi in center and remove seeds inside, then wash them for once. Further more, stuff prepared tamarind paste inside of the mirchi.
7 Now, in a large fry pan add required oil to deep fry and let it heat till hot enough. Once oil is ready, dip mirchi in batter and coat well.
8 Slid them in hot oil one by one. and adjust the flame on medium. because if you keep the flame on high, they will not get fry inside properly.
10 Now, serve hot mirchi bajji with sauce or pea nut chutney. or you can enjoy with hot ginger tea.
Tips :
1 Do not fry in high flame, because they will not get fry inside properly. once oil get hot enough, adjust the flame on medium.
2 Do not forget to add rice flour to gram flour, it helps us to make crispy Telangana Mirchi bajji recipe
3 Stuff tamarind paste inside of the mirchi, so that will add sour flavor while eating bajji.
