Telangana senaga gudalu recipe is a traditional Indian recipe, is a very quick fried peas snacks which is prepared by chickpeas, red chilies, curry leaves, salt and Hing. here chickpeas should be soak for whole night to get soft, as it reduces the time of cooking and helps us to cook fully.
Typically this recipe prepared in Telangana during festive season, specially prepared as prasadam for Ganesh Chaturthi, varalaxmi vratham and Navaratri.
For tempering we need to soak chickpeas for 12 hours or else you can boil in pressure cooker, but it takes long time to cook fully. and they should become soft that ensure chick peas cooked fully.
It is one of the healthy and tasty snack which is prepared in short time. when I'm make temper I have added green chili and red chili. if do not want to add both of them you can skip green chili and add enough red chilies to make this little spicy.
For adding good flavor to this recipe you can add pinch of Hing, add it according to the quantity of the chickpeas. although it helps us to get relief from the stomach pain, and bloating problem.

Telangana senaga gudalu recipe :
Soaking chickpeas :
Step 1 In a bowl Take one cup of chickpeas, wash them once to remove dust.
Step 2 Add required water in a same bowl. & soak for whole night.
Step 3 Next day, drain water, and check them whether they become soft. keep soaked chickpeas aside. if you want more soft you can place them in pressure cooker & add required water.
Then cook on medium flame till get two whistles. after that wait till pressure release by it self. then open lid and drain water if remain.
Tempering :
Step 1 Put the pan on flame & add half table spoon of oil and let it heat for a minute.
Step 2 Add 1/4 spoon cumin seeds, 1/4 spoon mustard seeds. then they will begin to splutter.
Step 3 Next add 3-4 chopped green chilies, sauté on low to medium flame till they get change color, Then add 3-4 chopped garlic, sauté for one minute.
Step 4 Add few curry leaves and 3-4 red chilies, sauté for 40 seconds, do n
Step 5 1/2 spoon turmeric powder, two pinches of Hing to pan then combine all.
Step 6 Add soaked chickpeas, add required salt then combine all and close lid. and cook for 2-3 minutes on low flame
Step 7 Once done remove from the flame, then transfer to serving bowl and serve Telangana senaga gudalu quickly.

1 Soak one bowl of chickpeas for whole night, then only chickpeas will become soft.
2 Next day, drain water and keep them aside.
3 Half table spoon oil. heat oil for tempering till its hot enough.
4 Once oil ready, add 1/4 spoon cumin seeds, 1/4 spoon mustard seeds. Add 3-4 chopped green chilies, sauté for 2 minutes on low to medium flame.
5 Next, add 4-5 chopped garlic, sauté for one minute for releasing raw smell.
6 Add few curry leaves, 3-4 red chilies. sauté for 30- 40 seconds.
7 Next, add half spoon turmeric powder, mix well. do not add more than this. add according to quantity of chickpeas which you have.
8 Add 2 pinches of Hing. it will helps to give good flavor to this recipe.
9 Then add soaked chick peas, add salt as required. combine all and cook for 2-3 minutes.
9 Turn off the flame and transfer to serving bowl & enjoy Telangana senaga gudalu
Ingredients :
1 Chick peas - 1 bowl
2 Green chilies - 3-4
3 Mustard seeds - 1/4 spoon
4 Cumin seeds - 1/4 spoon
5 Turmeric powder - 1/2 spoon
6 Red chilies - 3-4
7 Hing - 2 pinches
8 Salt - as required
9 Oil - Half table spoon
10 Garlic - 4-5
11 Curry leaves - few
How to prepare Telangana senaga gudalu recipe :
- In a bowl Take one cup of chickpeas, wash them once to remove dust.
- Add required water in same bowl. and soak for whole night (12 hours) because chickpeas take time to become soft. if needed more soft cook them in a pressure cooker for two whistles. you can also add some salt while soaking chickpeas.
- Next day, drain water and keep soaked chickpeas aside.
- Heat pan, add half table spoon oil to the pan and let it heat for a minute.
- Add 1/4 spoon cumin seeds, 1/4 spoon mustard seeds. sauté for 30-40 seconds then they will begin to splutter.
- Add 3-4 chopped green chilies, sauté on low to medium flame till they get change color. slowly they get change color slightly.
- Furthermore, add 3-4 chopped garlic, sauté for one minute, till the time of releasing raw smell.
- Add few curry leaves and 3-4 red chilies, sauté for 40 seconds. slowly red chilies get change color and curry leaves become crispy.
- Add 1/2 spoon turmeric powder to pan then combine all. do not add more than 1/2 spoon. taste will change to little bitter.
- Finally add soaked chickpeas, and then add required salt, combine all & close lid for 2-3 minutes on low flame to cook fully although combine all flavors.
- Once done, turn off the flame, and enjoy Telangana senaga gudalu
