Sorakaya vada recipe Telangana style or Sora kaya Vada / bottle gourd Vada's is a traditional Indian food recipe, which is prepared by bottle gourd, onions, and rice flour. this is usually served at snacks time and breakfast.
Generally Sorakaya vada recipe a is deep fried oil food recipe, it includes peeled and grated bottle gourd, and rice flour. for this recipe you need polythene paper to make round Vada. you need to flatten Vada over polythene paper to handle them easily while frying them.
Bottle gourd Vada would not absorb extra oil, it can absorb less oil when we fry on medium flame.
And it should have equal quantity of flour and grated bottle gourd pulp. its a important point that you should remember while making Vada.
How to make Sorakaya vada recipe Telangana style :
Making Sorakaya vada / garelu dough :
Step 1 Here I'm taking one bowl of grated bottle gourd stuff. in a mixing bowl add one bowl of grated bottle gourd.
Step 2 Then add finely chopped one onion, 3-4 chopped green chilies, 1/4 bowl of coriander leaves, half spoon of cumin seeds, one spoon ginger garlic paste, 1/4 spoon of turmeric powder, few curry leaves, and salt as required.
Step 3 Now add one bowl of rice flour to the mixing bowl, add flour equal to grated pulp. then combine all and knead this to 3-4 minutes to make soft dough, and keep it aside.
Frying Sorakaya vada :
Step 1 By the time take fry pan and add required amount of oil for deep fry. put this pan on the flame and let it heat for deep fry.
Step 2 Check whether oil ready to fry, by adding little amount of dough to the oil. if its come up immediately then oil ready to fry Vada.
Step 3 Next, take one polythene paper, put in on roti floor, and apply oil over the paper. then take lemon size dough, put on the polythene paper, and flatten with your fingers to round shape, and make a whole at center, prepare all Vada's in a same size.
Step 4 Then, gently slid this prepared Vada in hot oil, and adjust the flame low to medium, fry one side for 1-2 minutes and then flip to other side to fry evenly. fry till get golden brown.
Step 5 Once done, transfer them to serving plate. now Sorakaya vada recipe Telangana style or bottle gourd Vada / garelu is ready to serve. fry all garelu in a same way.
Ingredients :
Bottle gourd - one
Oil - required for deep fry
Cumin seeds - 1/2 spoon
Turmeric powder - 1/4 spoon
Ginger garlic paste - one spoon
Coriander leaves - 1/4 bowl
Curry leaves - few
Salt - as required
Onions - one
Green chilies - 3-4
Rice flour - one bowl

1 Firstly for this Sorakaya vada recipe, peel the bottle gourd and remove the seeds inside, then grate finely. in a mixing bowl, add one bowl of grated bottled gourd pulp. and add 1/2 spoon cumin seeds.
Furthermore, 1/4 spoon turmeric powder, 1/4 bowl coriander leaves, salt to taste, one spoon ginger garlic paste, one chopped onion, 3-4 green chilies and few curry leaves.
Making Sorakaya Vada dough :
2 Then add one bowl of rice flour, sieve the flour before you add, combine all and knead this to make soft dough, do not add water because bottle gourd pulp release water as required to the flour.
once dough is ready, keep this side. (take equal amount of rice flour to grated bottle gourd pulp).
Sorakaya vada preparation :
3 Take one round or square shape polythene paper, and put it on the floor, apply oil over the paper.
Then take lemon size dough, make a round ball with your palm, flatten with your finger into round shape Vada. and put the whole at center, making hole is optional.
4 Now, in a frying pan add required oil to make deep fry, and put it on the flame. let it heat till its ready to make deep fry.
once oil ready to make deep fry, gently slid prepared Vada to hot oil, and adjust the flame low to medium.
do not fry on high flame, it would not get fry inside properly. also it will absorb more oil.
5 Fry one side for 1-2 minutes, and flip to other side to get fried evenly both sides. flip accordingly till get golden brown color. once done transfer them to serving bowl.
6 Then bottle gourd Vada ready, serve at evening snacks time or as breakfast.

- Fry on medium flame to prevent to extra oil absorbing of Vada.
- Apply oil over polythene paper and to your hand as well to make it fast and handle easily.
- You can add few sesame seeds and few ground nuts to add good flavor to sorakaya Vada.
