Cabbage Vada recipe
About Recipe :
Cabbage masala Vada is a simple traditional recipe across India, is a deep fried snack usually prepared for evening snacks. and the main ingredients are cabbage and Bengal gram (Chana dal).
For this recipe you need to soak Chana dal about 30 -40 minutes minimum. it is very similar food as masala Vada recipe, and in this recipe here cabbage flavor is going to be added.
This masala garelu recipe is very simple to make, although it tastes good & crispy. mostly I would like to prepare this recipe in winter and rainy season. this Vada is going to be best snack for rainy evening. and I believe every one love this recipe.
How to make cabbage Chana dal Vada recipe
Soaking Bengal gram (Chana dal) :
1 Firstly, take 1/2 bowl of Bengal gram, then wash once to remove dust particles.
2 Now, add required water to bowl, & soak Bengal gram about 40 minutes. soaking is important step in this recipe. because of soaking dal becomes soft and easy for grinding to make Vada batter.
3 After 40 minutes you can check whether the dal become soft, it means when we split dal using fingers it should split easily. so we can confirm that dal soaked & ready to make Vada.
4 Take 3 tea spoons of soaked Bengal gram aside to add directly to Vada batter. this would be helps us to make Vada more crispy & crunchy.
Making cabbage masala Vada batter :
1 Now, drain water completely, transfer soaked Bengal gram to mixer jar. and add 1/4 spoon of pepper.
2 Grind them slightly, do not make over soft and smooth paste. it should be crunchy paste.
3 Before that you need to take one cabbage and peel the first layer. wash it once to remove dust. then chop cabbage finely.
4 In a mixing bowl, transfer that Bengal gram paste, and add all ingredients, like 2 cups of finely chopped cabbage, green chilies finely chopped, salt to taste, few curry leaves (chopped), 1/4 bowl coriander leaves.
Furthermore, cumin seeds 1 spoon, finely chopped ginger & garlic one spoon, red chili powder 1 spoon, rice flour 2 spoons, you can also use corn flour instead of rice flour. and add 3 tea spoons of soaked Bengal gram.
5 Combine them by squeezing cabbage, no need to add water, because cabbage release required moisture to form flour together.
Deep Frying masala Vada :
1 In a frying pan, add required oil for fry Vada, keep this pan on flame. and let it heat till hot enough.
2 Once, the oil is ready to fry Vada, adjust the flame on low- medium. then start frying Vada by dropping Vada's in hot oil.
3 Flip occasionally, till the Vada get golden brown color. once they reach to specific color just transfer them to serving bowl. prepare all the Vada's in a same way.
4 Now, serve them when they are hot, with tomato ketchup or you can them directly. they are so tasty and crispy.
Ingredients :
1 Bengal gram (Chana dal) - 1/2 bowl
2 gram flour - 1 bowl
3 rice flour - 2 tea spoons
4 Cabbage finely chopped - 2 cups
5 red chili powder - 1 spoon
6 Chat masala - 1/4 spoon
7 Jeera powder - 1/2 spoon
8 Coriander powder - 1/2 spoon
9 Green chilies - 3-4 finely chopped
10 Curry leaves - few
11 Coriander leaves - 1/4 bowl
12 Salt - as required
13 Oil - required for deep fry
14 Pepper - 1/4 spoon
15 Cumin seeds - 1/2 spoon
16 Ginger garlic paste - 1 spoon
17 Turmeric powder - 1/4 spoon
Step by step recipe along with recipe photos :
1 Initially, Take 1/2 bowl of Bengal gram and wash them for once.
2 soak 1/2 bowl Bengal gram for 40 minutes.
3 Meanwhile, take fresh cabbage & remove the first layer which has damage or dust particles. then chop this cabbage finely for 2 bowls, as I made with 2 bowls of cabbage. and you can take the quantity of your wish.
4 Now, after 30 minutes drain the water completely from soaked Bengal gram. and transfer them to mixer jar, before that keep 2-3 tea spoons of soaked Bengal gram aside. you need to add them to Vada batter. also add 1/4 spoon pepper.
5 Grind them to paste, do not make too soft as it should be little crunchy.
6 In a mixing bowl, add the ingredients such as soaked Bengal gram paste, 2 bowls of finely chopped cabbage.
7 Further more, add salt to taste, 1/2 spoon cumin seeds, finely chopped garlic and ginger or one tea spoon ginger garlic paste, 1/4 spoon turmeric powder, 3-4 finely chopped green chili.
8 1/4 bowl finely chopped coriander leaves, few curry leaves,1/2 spoon red chili powder,1/2 spoon jeera powder, 1/4 spoon chat masala, 1/2 spoon coriander powder,
9 Add 2 tea spoons of rice flour or corn flour, then combine all of them. squeeze cabbage as its release moisture to make Vada batter.
10 Now, apply oil to your palm, and take lemon size dough to make round ball. and flatten it to round Vada by pressing with your fingers.
11 In a fry pan, add required oil for fry Vada, let li heat till it ready to fry Vada. you can also check weather oil ready, drop pinch of Vada batter in oil, if its floating in oil, its ready to fry.
12 Fry Vada on low -medium flame till, get golden brown color. once they fried well transfer them to serving bowl.
13 Yes, now cabbage Vada is ready eat, you can serve them with tomato ketchup. or eat directly crispy Vada, also enjoy them with hot ginger tea.
Pro Tips for cabbage masala Vada :
- For spicy flavor, you can use only green chilies as required, no need to add red chili flavor, or you can use chili powder instead of green chili.
- Adding extra coriander leaves gives us to get nice flavor of cabbage Vada.
- You need to fry them on only medium flame or low- medium to cook inside properly and preventing absorbing more oil to Vada.
