Meal maker dum biryani : meal maker dum biryani recipe is a traditional Indian biryani recipe which is consists of meal maker and spices.
Meal maker or soya chunks biryani is a very easy to make at home with available ingredients at home, such as meal maker, curd, spices are main ingredients in this recipe.
Literally we can prepare this without marinate meal maker for gravy, this is must for dum biryani,
If you want to prepare regular biryani, so it can be prepare by using pressure cooker, if you prepare meal maker biryani in cooker, no need to precook rice about 75 %, as you can directly add soaked rice to cooker.
The biryani process is same like other biryanis, like veg dum biryani, or pannier biryani, or any other biryanis, marinate soya chunks is same like in other biryani steps.
but there are other ways to prepare meal maker biryani or soya chunks biryani, like without marinate.
Meal maker dum biryani is also taste like mutton biryani if you follow the same steps which I have provided below.
How to make meal maker dum biryani recipe or soya chunks biryani :
Step 1 Initially, in a bowl take 2 cups of basmati rice, wash for 2 times at least to remove dust particles. Then add required water to soak rice about 20 minutes.
Soya chunks marinate :
Step 2 Take one bowl of soya chunks, and add required hot water to soak them about 5 -10 minutes. .
Step 3 After 10 minutes, they will become smooth and soft. strain water and add them to mixing bowl.
Step 4 Add all the spices to them, such as red chili powder 2 tea spoons, coriander powder 1 spoon, cumin powder 1 spoon, ginger garlic paste 1 spoon, garam masala powder 1 spoon.
Furthermore, biryani powder 1 spoon, salt 1/2 spoon, turmeric powder 1/2 spoon, and one bowl of curd. and combine them all. marinate about 30 minutes. (rest about 30 minutes in refrigerator )
Cooking basmathi rice :
Steps 1 Meanwhile, in a vessel add 6-7 cups water, let them boil. and add spices like 1 bay leaf, 1/2 inch cinnamon, 3 cloves, 1 cardamom pod, 1/4 spoon sahjeera, 1 star anise.
Further more add 1 spoon salt and let the water boil till rolling boil.
Step 2 Once the water started rolling, add soaked basmati rice, and cook till 75 % . rice should not be cooked fully. check with your finger whether rice cooked 75 % .
Step 3 Then, strain excess boiled water form the rice, keep them aside.
Making meal maker dum biryani :
Step 1 Now, in a pan add 2 table spoons of ghee, and add one finely sliced onions, and 2 finely chopped green chilies, sauté them till they become transparent.
Step 2 Further more add 2 finely chopped tomatoes, sauté till they become soft.
Step 3 Once tomatoes becomes soft, then add marinated soya chunks gravy to pan, combine once and cook till the oil get separated form gravy.
Step 4 Once the gravy is ready adjust the flame on low flame. then add 75% cooked basmati rice to the pan, layer the rice evenly over gravy. then spread some ghee over rice and some fried cashews, finely chopped coriander leaves.
Step 5 Then, close lid & put 1/2 kg weight over the pan. or you can close with foil to pretend to release dum from rice. cook till 15 minutes on low flame.
Step 6 Once check whether the rice cooked fully, remove from flame and enjoy soya chunks biryani or meal maker biryani.

Cooking basmati rice :
1 Soak 2 cups of basmati rice about 20 minutes.
2 In a pan add 7 cups of water and all spices, 1 bay leaf, 1 cardamom pod, 3 cloves, 1 inch cinnamon, 1 star anise, 1/4 spoon sahjeera. and then boil water till rolling hot enough.
3 Once the water is ready, add soaked basmati rice and cook toll 75%.
4 Once rice cooked till 75% check with your finger, it should break while breaking. and should not over cook the rice.
5 Once rice cooked remove from flame strain excess water form the rice.
Marinate Soya chunks :
6 In a next step, take one bowl of soya chunks and add required hot water to soak about 10 minutes. or you can cook in water about 5-10 minutes to make them soft.
Once they become soft, squeeze excess water form soya chunks.
7 In a mixing bow add soya chunks, and spices like red chili powder 2 tea spoons, salt 1/2 spoon, coriander powder 1 spoon, cumin powder 1 spoon,
Garam masala and biryani powder 1 spoon, turmeric powder 1/2 spoon, ginger garlic paste 1 spoon. and lastly add 1 bowl of curd. combine all of them and marinate about 30 minutes.
Preparing soya chunks biryani :
8 In a pan, add 2 table spoons of ghee, and add one bay leaf and one finely chopped onions, 2 chopped green chilis.
Sauté them till fried well.
9 Once they fried well add soya chunks marinate to pan, and 1/2 bowl of water. then cook till the gravy separated form oil
10 Once the gravy is ready, spread cooked basmati rice over gravy.
11 Spread rice over ghee, and layer evenly, and spread some ghee over rice, some fried cashews, some coriander leaves finely chopped.
12 Close lid and put 1/2 kg weight over the lid to prevent release dum form rice. and cook about 15 -20 minutes on low flame.
13 Check whether rice fully cooked , once done remove from flame and serve.
14 Now, soya chunks biryani or meal maker dum biryani is ready to serve, transfer to serving bowl and enjoy soya chunks biryani.
